The Kai Shun Premier Tim M?lzer Tant? (TDM-1785) was created especially to mark the 15th anniversary of the Shun Premier series and is strictly limited to 6,666 pieces worldwide. Each knife is a unique collector?s item, featuring an individual serial number as well as the exclusive ?15 The Legend? logo placed right next to Tim M?lzer?s signature.

This extraordinary edition is so remarkable that it has already been honored with the German Design Award 2025 ? a true testament to exceptional craftsmanship and timeless design.

The core of the Shun Premier blade is crafted from extremely hard VG MAX steel and masterfully wrapped in 32 layers of fine Damascus steel. This combination of steels gives the edge exceptional hardness while maintaining impressive elasticity. The double-beveled blade is lightweight and comfortable to handle, ensuring precise, clean cuts at all times?ideal for fish and delicate filleting tasks.

The distinctive hammered finish, known in Japan as Tsuchime, is not only aesthetically striking but also functional. The tiny air pockets reduce sticking, allowing food to release easily from the blade.

The ergonomically symmetrical handle made of high-quality pakkawood is suitable for both left- and right-handed users. A full tang provides optimal stability and balance, while the handle end features a subtle engraving of Tim M?lzer?s bull logo, the signature mark of the renowned professional chef.

This knife is extremely sharp and should only be washed by hand to preserve the blade?s longevity and precision.
