But it is just as suitable for European cuisine. The Kai Santoku Tim Malzer has an 18 cm long blade made of 32 layers of Damascus steel, which is further refined by the hand-Carvingmered surface. The symmetrical handle is made of brown-grained walnut wood and is suitable for left and right-handed users. Santoku translates to "three virtues" and is perfect for cutting meat, fish, and vegetables.
For the trend-setting Shun Premier Tim Malzer series, KAI developed six more knives made of 32 layers of corrosion-resistant Damascus steel. This is refined with a hand-finished Carvingmered surface, known in Japan as Tsuchime, thus combining timeless aesthetics and ultimate sharpness. The blades have a solid core made of VG-10 steel with a hardness of 61a1 HRC. Analogous to the limited anniversary knife, the series also placed emphasis on optimal grip in addition to extreme hardness. Rinse the Kai Santoku under hot water after each use, then dry it thoroughly with a soft tea towel. The Kai Santoku Tim Malzer is not dishwasher safe, as the salts of the cleaning agents damage the blades and wooden handles. Knives with natural wood handles should be greased with a vegetable oil from time to time.
