The GS-8 is a specialist peeling knife and has a curved blade to work around carrots, potatoes and other vegetables and fruits.
The knife has the same blade as the GSF-17 but the GS-8 has the standard hollow handle of the Global GS range. We recommend this peeler for chefs with bigger hands who find the GSF range too small.
