The G-10 is a specialist salmon, ham and meat slicing knife. It has a very long, thin and flexible blade that makes it suitable for this purpose. These knives are typically used for cutting pieces of smoked salmon or trout, slicing off slivers of ham, prosciutto, roast beef and similar meats.
The blades are ideal for slicing long thin pieces, which is how smoked salmon is traditionally presented. The handle is the same as other G series knives and is comfortable to hold. There is a gap of about 2.5cm from the handle where the blade is not sharpened to provide a bit of protection for the fingers.
This is the longest knife blade that Global produces and as such does not fit in any of the knife blocks, please note it also may not slot into a drawer (best to measure). Ideally it needs to be put on a magnetic rack where it makes an eye catching conversation piece.
